Product production process


Raw material preparation
Beef tallow, thick broad-bean sauce, minced onion, bruised ginger, beans, bhut jolokia, zanthoxyli pericarpium bungeani seeds, the new generation of chili, cumin seeds, mixed condiments, I+G, salt, aginomoto, fermented glutinous rice, chili oleoresin, yeast extract, Xuemailon water soluble flavor powder, Xuemailon zanthoxyli pericarpium bungeani oleoresin and Xuemailon flavoring seasoning products.
Condiment preparation
1. Bhut jolokia, the new generation of chili for preparing glutinous chili;
2. Heat the beef tallow in the pot, until it is completely melted, put the minced onion and bruised ginger into the pot for boiling at the temperature of 150°C, until it turns golden yellow;
3. Put the glutinous chili into the pot, boil it with soft fire at the temperature below 120° for 20 min;
4. Add zanthoxyli pericarpium seeds, cumin seeds, mixed condiments and fermented glutinous rice for boiling for 30 min;
5. Heat the pot below 80°C and then put the condiment into the pot.
Application
Main ingredients: 500 g backing material, 100 g hot pot flavoring oil
Auxiliary materials: 15 g chopped green onion, 10 g zanthoxyli pericarpium seeds
Cooking method: 2,000 g soup-stock or purified water mixed with the ingredients for use
